Steak Frites (With the easiest shortcut to make delicious Truffle Gorgonzola Fries) We top our Steaks with Maitre D’ Hotel Herbed Butter!
Steak Frites & a glass of red wine transports me right back to a bistro in Paris. We make ours with fillet tenderloins and they are so delicious! We love The Balthazar cookbook and use their recipe. I will outline here & go over making “Maitre d’hotel butter”
Let’s start things off with a very quick & easy version of Gorgonzola Truffle oil French fries ( I also included a lengthier version below from a recipe graciously given to me from The Breakers Hotel in Palm Beach Florida). I have taken cooking classes & shopped food markets & mercado around the world for years. I love bringing back inspiration from my travels to my home kitchen and hopefully inspiring our readers, friends, & family to “Get Cooking”
Shortcut Gorgonzola Truffle Fries
1 bag thin cut frozen French fried
Good quality truffle oil (we used black truffle oil
A small sprinkling of sea salt (optional)
Fresh ground black pepper
Block of Gorgonzola cheese
Preheat oven to 375
Spread thawed fries out on baking sheet
Add a little sea salt & cracked pepper
Bake in oven until they begin to crisp up
Remove from oven
Drizzle a small amount of truffle oil over fries & toss
Crumble Gorgonzola on top of fries ( use as much or as little, depending on how much you like) I typically use about half of the block of Gorgonzola. Don’t over power the fries.
Return to oven and continue to bake
*** I like to then broil for a few minutes to get the fries nice and crispy. But please take care to NOT walk away as they can burn very quickly. I watch them closely
I typically do this while my steaks are cooking, either on the stove in a grill pan ( we love Le Crueset) or on an outdoor grill
Remember to let your steaks rest after grilling to lock in all that delicious juice.
Maître d’hotel Butter
(Herbed Butter)
FOR THE MAÎTRE D'HÔTEL BUTTER
Adapted from Balthazar, (however, we made several changes in our version below)
½ pound (2 sticks) unsalted butter, softened (personally we like using one stick salted & one stick unsalted)
2 tablespoons finely chopped flat-leaf parsley
1 shallot, finely chopped
1 garlic clove, finely chopped
½ teaspoon chopped fresh sage
1 tablespoon chopped fresh chives
1/2 teaspoon salt
Pinch of freshly ground black pepper
Combine ingredients & roll into cylinder, wrap in plastic or parchment and chill in fridge.
•FOR THE STEAKS
Adapted from Balthazar Cookbook
We used fillet
4. steaks, about 10 ounces each, about 1 inch thick
2 tablespoons salt
2 tablespoons coarsely ground black pepper
3 tablespoons olive oil
Plate your steaks and Gorgonzola truffle fries and add a little Pat of Maître d’hotel butter on top of steaks letting it melt gloriously onto hot steaks!
*** adapted from The Breakers Hotel & my article was published for a cooking sit several years ago. For those of you who prefer, we added a lengthier version, if you feel like trying this instead of our quick shortcut recipe above! Gorgonzola Truffle Oil French Fries with Citrus
6 Idaho potatoes, one package of gorgonzola cheese, a triangle wedge 1 cup of heavy cream 2 tbsp of truffle oil (either black or white) – I used black, because that is what I had on hand. The juice of half an orange, sea salt and freshly ground pepper, to taste Scrub potatoes clean, keeping the skin on. Cut potatoes in half lengthwise and place the potato half in the slicer, pull down the lever to make even fry-shaped slices.
Fill your deep fryer with vegetable oil to the appropriate level indicated in the directions. Fry potatoes in batches until golden brown, taking care to not crowd them.
Drain on paper towels and sprinkle with sea salt
Add the heavy cream to a saucepan and reduce over medium heat for about 5 minutes. Stir in chunked up pieces of the Gorgonzola cheese. Add the truffle oil, continuing to stir. Remove from heat and add the juice from half an orange slat and pepper to taste. Place French Fries on a decorative platter and drizzle with gorgonzola sauce and serve.

Homemade Apple Cider Glazed Dumplings
Our apple dumplings are one of my family and friends favorite Autumn dessert I make!
We use Dufour puff pastry, local apples & local apple cider. I live in the countryside of New Jersey with several wonderful farms & cider mills.
If you have questions on any of our recipes please feel free to email us.
Recipe:
Core apples ( we typically make 6 dumplings)
Add a small Pat of salted butter & 1 heaping tablespoon of light brown sugar
Add a very small pinch of ground cinnamon
Roll out thawed Dufour puff pastry
Wrap each apple
We typically can make 4 dumplings per one sheet of puff pastry
Bake in pre heated oven check around 20 minutes so they don’t over brown
cool and add icing
Apple cider icing:
Combine
2 tablespoons apple cider
1 cup confectionery sugar
1 tablespoon of heavy cream
(You can easily double the icing- add more apple cider or more powdered sugar to get the consistency you want)
Serve with scope vanilla ice ream
Preheat oven to 400 degrees (all ovens are different so be careful not to burn or overcook your dumplings. We used an ovenproof ceramic casserole dish to bake in. We only put 4 dumplings per baking dish as to NOT overcrowd them and allow them for o puff up into a beautifully delicious buttery dessert.
*** please note the buttery brown sugar filling will not make your puff pastry soggy & will be incredible while warm melting into the side of vanilla ice cream. you can certainly omit that but it’s what makes these delicate pastries more unique, mouthwatering & irresistible!
Milk Chocolate Covered Raisin Oatmeal Cookies (with sea salt)
Our spin on the classic Quaker Oats recipe for oatmeal raisin cookies
(There are no chocolate chips in our version)
The combination is mouthwatering & the hit of sea salt is the perfect balance.
Please make sure not to over bake them & check on them BEFORE the timer goes off!
Ingredients
I cup of butter (= 2 sticks of butter - 1 salted & 1 unsalted) at room temperature
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs (room temperature)
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon sea salt (we love the flavor it adds)
1 cup milk chocolate covered raisins
3 cups Quaker Oats (quick or old fashioned uncooked)
Baking Instructions
“Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.“
*** bakers note we like ours on the large side, moist & chewy
For crispier make a little smaller and bake a little bit longer

Brooklyn Pizza, Museums, & Rooftop Cocktails at Loopy Doopy
Out And About With Paris House Brooklyn Edition
By, Michele Rosenthal
We love traveling both near and far and sharing our adventures with our readers. We have been writing on travel for over 30 years & are excited to continue sharing what to do, what to see, where to eat, shop, stay, what to pack in your suitcase and much more. We offer a full service travel, fashion styling & event planning business to help you plan Unforgettable Events & Trips!
We started off at The Brooklyn Museum for the Andy Warhol exhibit, (I found this very interesting, especially everything from his earlier years, prior to his 80’s fame, I loved this exhibit & TBH I was skeptical, as I have very mixed feelings on him) I enjoyed learning more about his childhood and I learned a lot from this exhibit. (Please check online for dates of gallery exhibits, restaurant hours, rooftop bar hours before going to ensure an enjoyable outing)
Then it was off for pizza & local beer in Brooklyn -my 2nd favorite pizza in the world, (Naples Italy being my favorite but honestly this is truly just as delicious. I’m Italian so my love of Italy is immense),
Barboncino is outstanding, we love the soppressata with a side of chili honey, it’s fabulous (thanks @todddurm for telling us about @barboncinopizza - It was our 2nd time & can’t wait to return. I cook & bake often so I’m a bit fussy & I’ll always be honest with you - this pizza is FABULOUS!
We then headed back into Manhattan for cocktails at Loopy Doopy rooftop at The Conrad Hotel. The weather was absolutely gorgeous & I had so much fun with my son Sam. They limit the amount of people on the roof, and we have found going early or on a weekday is best. You must try their spiked popsicles in Prosecco! They have a bar menu & you can also dine downstairs in the hotel & weather permitting there are plenty of outside cafés. It feels like a touch of Europe in the financial district of NYC!
Nearby attractions are the waterfront, Freedom Tower, plenty of shopping, and more! We will share more restaurants in the area soon!

Cliveden House, England
Out And About With Paris House England Edition
By Michele Rosenthal
My recent stay at Cliveden House in June was something dreams are made of. Saying that it was straight out of a fairytale is an understatement. I flew British Airways to London arriving at 6:30am. My private driver (arranged by Cliveden House) whisked me away in a luxury Mercedes on a quick 30 minute journey. As we entered the long scenic road, passing the Fountain of Love, We approached the Manor Home built in 1666. Any possibility of jet lag was quickly replaced by joy and excitement of all the adventures that lie ahead at this Fabled Castle.
The Hotel was gracious enough to set me up in a room to relax inand use the spa until my hotel room was ready. The weather was sunny and in the mid 70’s each day with no rain. My beautifully designed room, named after famed interior designer, Nancy Lancaster, was stunning and included a private jacuzzi on an English terrace surrounded with English roses and view of the gilded clock tower, absolutely charming.
Cliveden House was originally built in 1666 by 2nd Duke of Buckingham and has the most glorious spa with delicious fruit smoothies, walled flower gardens, spectacular views of formal parterre gardens, a Juliette balcony with views of the River Thames, a pool landscaped in lavender and roses planted en masse and perfuming the air, delicious high tea and much more. The breakfast was so beautiful it looked like a renaissance painting. I enjoyed coffee overlooking the expansive formal gardens each morning.
Honestly, it was hard to leave here during my stay! I did plan wonderful private day tours to Stonehenge, and I revisited London & The Cotswolds, more on that in England parts 2,3,&4
History on Cliveden House sourced from Their website “ Cliveden House is a privately owned five AA Red Star award-winning hotel, our story is one of over 350 years of powerful personalities, iconic parties and scandalous affairs. Built-in 1666 by the 2nd Duke of Buckingham, as a gift to his mistress, Cliveden House has remained a pinnacle of intrigue and glamour for the elite.
Now, our Grade I stately home set upon 376 acres of beautifully presented National Trust grounds is a luxurious five-star Relais & Châteaux hotel and spa, ready and waiting to welcome you to create your own moment in Cliveden's history.”
The highlight of my time at Cliveden House was the Champagne High Tea Boat Ride Down River Thames . The most unforgettable and delicious High Tea I have ever experienced. I am still dreaming about the sconces, clotted cream, jam, tea sandwiches & Champagne. I have had many amazing high teas around the world, but this tea was extraordinary! My private Mercedes drove me down beyond the parterre gardens to The Cliveden Boathouse on River Thames. It was there, we began our scenic journey on one of the most beautiful idyllic parts of the Thames. The river is aprx 215 miles long (depending on who you ask!) and I was told the Queen owns all of the unclaimed Swans on the river. Now that is a real life fairytale.
After my scenic boat ride I changed into a yellow velvet gown and caplet with crystal details. I walked through the formal gardens to the main house where I enjoyed a martini on the limestone terrace complete with balustrades and magnificent views. I promise you will sleep well on the most comfortable bedding and quietness. There is a gift basket filled with spa shoes and towels if you want an evening Of relaxation in the hot tub after dinner, As mentioned, my room had a private one.

Jersey City, NJ Outing

Out And About With Paris House, Jersey City Edition
I have been going to Bon Vivant in NYC for several years to get their Petit Fours. They are fabulously delicious. Soaked in a variety of flavors such as, rose, lavender, coffee, lemon and more. They are decorated with delicate floral detail by the hands of artisans. I love gifting them to friends. They recently moved their store to Jersey City & it is beautiful. The interiors are chic, fresh, a feast for the eyes. I placed my order in advance on their website
https://www.google.com/maps/place/Bon+Vivant+New+York/@40.7113035,-74.0576637,20z/data=!4m5!3m4!1s0x89c25a18c68987e3:0x5bad4ef5c353df21!8m2!3d40.7111943!4d-74.0576121 https://bonvivantnewyork.com and planned a fun day around our visit to Bon Vivant.
My husband and I began our day together enjoying cappuccino & petit fours, then it was off to Liberty State Park. Taking in the incredible sky line & Statue of Liberty never gets old. The view is wonderful. Located on the shores of the Hudson River, with views of Manhattan skyline, Statue of Liberty and Ellis Island, Liberty State Park is one of the state's most beautiful parks. There are popular restaurants nearby with views that will dazzle, such as Liberty House Restaurant
For dinner, We decided to try something more casual, with a European Bistro atmosphere and menu. We went to Satis Bistro https://satisbistro.com and it was very good. The services was incredible & a quaint atmosphere with outdoor seating.
There is a charming little bar area tucked away, you must pop in there, it’s so cute! My endive salad was balanced perfectly with a lemony truffle dressing & the gnocchi dish melted in my mouth. So delicious! My husband loved the steak frites.
The streets are lined with cute shops, restaurants, bars and more. I hope you enjoyed reading our travel guides on Jersey City

Out And About With Paris House, Spring Lake, NJ Edition
By Founder, Michele Rosenthal
Hello to my Local Readers! And also to you, Dear Readers from around the world! Many of you have been reading my blog for over 20 years! And welcome to those who are new here. It has always been our goal to share beautiful travel adventures, both near and far. As we approach the Fourth Of July weekend, and, if you are looking for a relatively close, last minute getaway, perhaps something a bit more refined? With a beautiful beach & a quaint old fashioned “Main Street” near by.
If you like quintessential, small Oceanside Americana, then Spring Lake NJ is for you. It has a beautiful 2 mile long boardwalk with absolutely no commercial activity on it. Making it an enjoyable place for a bike ride or leisurely walk to the beach. There is a $10 fee per person or a season pass, but trust me, it’s well worth it. The beach is clean & beautiful. Enjoy watching the waves crash gently to shore, while the air around you is perfumed with salt water & coconut lotion.
Pack a picnic lunch to enjoy under the Victorian gazebo or go across the street to “Breakers On The Ocean”. We love their selection of fresh salads, jumbo shrimp cocktails, pina coladas, festive mocktails for the kids, wraps and more. Sit indoors, by the pool, or our favorite, on the front porch, cocktail in hand, with an ocean view.
After a day on the beach, head to 3rd Avenue, the towns quaint Main Street to enjoy chocolates at Jean Louise Homemade Candies. Have pizza, ice cream, and other yummy foods nearby. There is plenty of shopping on this quaint street. Select some fresh flowers to bring to your hotel room! I always find something pretty to bring back home with us. Walk down to the flagpole for a nice photo op with your family and friends. Rent a bike, visit the nearby park, go to the local theater, or simply sit and relax while savoring these special Summer Days.
There are hotels, charming Bed and Breakfast Inns in town & plenty of places to eat. It’s A wonderful little getaway for the entire family. Stay in a Victorian Inn and enjoy tea under a beautiful striped awning.
Linking a few items under $100 that would be adorable to pack for Spring Lake. Follow our LTK SHOP Theparishouse for more!

Drawing upon the natural scenery, historic nearby towns, and stunning eclectic designs, beauty is everywhere you look. Recently design icon Celerie Kemble revitalized the interiors of the inn, combining historic Victorian architecture and 19th century artwork with a modern freshness. It’s safe to say your room and the Shakespeare garden alone will wow you.
The Inn also has countless amenities. Are you in the mood for a massage or facial? Step into THE WELL to get lost in your wildest dreams, receiving treatment from only the best professionals. You can also receive holistic treatments from doctors and health practitioners. After you feel revitalized and ready to go, take a swing on the tennis courts. When we stayed, my husband got lost in the game as I relaxed in the spa.
Next, stop by The Garden Room to have carefully crafted, farm-fresh meals from expert chefs. The openness and country atmosphere will feel like a breath of fresh air. When your stay comes to an end, pop into the shop The Huntress. You’ll find gorgeous, high-quality clothes and sentimental souvenirs to remember for a lifetime. Then, make your way through the quaint village, where you can shop for one of a kind finds to bring home as a beautiful reminder of your journey to New England. From snowfall and spring renewal to summer activities and fall foliage, Mayflower Inn & Spa has an abundance of refreshing activities, peaceful musings, and beauty to fulfill your ever need.
