As I set out on a new adventure, I can’t help but feel enchanted by the familiar beauty of Portugal. The Sunday Guides in this stunning country are not only about places to explore, they are also a heartfelt journey through my own memories from past travels. Every destination highlighted is like a chapter in my travel diary, filled with amazing stories from around the globe, and I'm excited to share my reflections with you, dear readers!

My first trip to Portugal was in 2018, and I had the pleasure of returning in May 2024 when I discovered the enchanting Douro Valley. Oh, the food! Traditional bacalhau, sardine season, and the iconic pastel de nata were simply heavenly! I stayed at a lovely Quinta surrounded by picturesque vineyards, with stunning architecture beautifully adorned with blue and white tiles. The warm-hearted locals were always eager to share smiles and stories, truly enriching my experience, while the richness of the wine made every moment even more unforgettable.

 

This adventure was partially a solo trip; when I arrived, I didn’t know a soul! Yet, I departed with a heart full of warmth and wonderful memories of all the friendly faces I met. It turned out to be more than just a trip. It was a profound experience of self-discovery. The world is filled with kind souls, and often, the most memorable travel experiences come from unexpected connections. For instance, I remember a local guide in the Douro Valley who shared fascinating stories about the region's history and culture, making the trip even more enriching.

 

This issue shines a spotlight on Portugal, especially Porto, the magnificent Douro Valley, Fatima, and Costa Nova. The Port wine and local cuisine are genuinely exceptional. With stunning panoramic views, serene boat rides on the river, and encounters with some of the warmest people you'll ever meet, Portugal is sure to capture your heart and draw you back time and again. For all you travel lovers, autumn is an exhilarating season! As the crowds begin to dwindle in Europe, the weather turns pleasantly cooler, inviting exploration. The beaches remain inviting, the sea is warm, and numerous sights and activities await discovery.

I begin writing the editor's letter in the Adirondack Mountains on a sunny day surrounded by mountains that meet the shimmering lake water seamlessly. At the same time, boats sail by with a wave in our direction with that relaxed summer feeling and nostalgia. I grew up in this beautiful part of the world, and it is a peaceful place to write. I begin writing our editor's letter at 30,000 feet in the sky as Spring's cherry blossoms, daffodils, and NYC fade in the distance below. We are off on a business and pleasure adventure. I am visiting and writing about two unique hotels in Cancun, Riviera Maya and Isla Mujeres, each with their own distinct charm and allure, which we will feature in an upcoming issue.

We like to begin our day in Jersey City enjoying cappuccinos & petit fours. Then it’s off to Liberty State Park, where the wonderful views of the incredible skyline and Statue of Liberty never get old. Liberty State Park is one of the state's most beautiful parks. It is located on the shores of the Hudson River with views of the Manhattan skyline, Statue of Liberty, and Ellis Island. There are popular restaurants nearby with views that will dazzle, like the Liberty House Restaurant.

For dinner, we decided to try something more casual yet still beautiful with a European bistro atmosphere and menu. We went to Satis Bistro where the service was incredible. The outdoor seating had a quaint atmosphere. There is a charming little bar area tucked away. You must pop in there; it’s so cute! My endive salad was balanced perfectly with a lemony truffle dressing & the gnocchi dish melted in my mouth. It was so delicious! My husband loved the steak frites. The streets are lined with cute shops, restaurants, bars and more!

Jamaican Pork Tenderloin With Sauce Caribe (adapted from southern living)

 
 

We have been making this DELICIOUS and EASY recipe for 21 years & EVERYONE loves it! If you are in the Chester NJ area we highly recommend Chester Meat Market. I have been shopping there for decades. It’s outstanding.

  • coconut mint iced tea add rum if you like

  • Dessert - too hot to bake?!!! or simply don’t feel like spending all day in the kitchen!!! No worries get a dessert delivery straight to your door!!! We love Mini upside down pineapple cakes that will pair beautifully with our Tropical Dinner Menu!!! We linked them for you! Fun tip!!! Add a sparkler to the top of each mini cake and WOW your guests (please use EXTREME caution around guests & children and make sure to put out flame in water before disposing)

Recipes:

Our Grilled pork tenderloin topped with the most delicious red current Caribe Sauce. It’s amazing!

Jamaican Pork Tenderloin With Sauce Caribe. (Our pork tenderloin is from Chester Meats, Chester NJ.)

Recipe Adapted from southern living 2002 issue!!

Ingredients:

  • 1 1/2 to 2 pounds PORK Tenderloin (our pork tenderloin are from Chester Meats!)

  • 3 tablespoons fresh orange juice

  • 1 & 1/2 tablespoons McCORMICK Gourmet Collection Jamaican Jerk Seasoning (or substitute with your favorite brand)

  • 1/2 cup red currant jelly

  • 1/4 cup Dijon mustard

  • 2 tablespoons dark rum or orange juice (I use orange juice)

  • Garnishes: chopped honey-roasted USA PEANUTS, tropical pesticide free edible flowers

  • Long-grain and wild rice (optional)

Directions:

Preheat Grill

Spoon the 3 tablespoons of orange juice over the tenderloins. Sprinkle 1 & 1/2 tablespoons Jamaican seasoning over the top.

Grill pork until cooked through, do not burn

While pork is grilling make the sauce.

Add these ingredients to sauce pan:

1/2 cup red currant jelly

1/4 cup Dijon mustard

  • 2 tablespoons dark rum or orange juice (I use orange juice)

Heat until combined and sauce is thinned a bit

Cover pork & let rest for 5-10 minutes

Slice and place on serving platter. Spoon sauce over, sprinkle with honey roasted peanuts. Garnish.

Serve warm!

Coconut-Mint Iced Tea

Of course, if you're in the mood for a tropical cocktail, add a splash of rum.

8 SERVINGS

2 cups fresh mint leaves (from 2 large bunches)

8 cups double-strength fresh-brewed tropical blend iced tea (such as original blend Paradise brand)

1 cup (or more) coconut syrup*

5 tablespoons (or more) fresh lemon juice

Ice cubes

Place mint leaves in large pitcher. Crush mint with muddler or wooden spoon.

Add hot tea, 1 cup coconut syrup, and 5 tablespoons lemon juice. Add more coconut syrup by tablespoonfuls and lemon juice by teaspoonfuls, if desired.

Cool completely. Fill glasses with ice, pour tea over, and serve.

*Available at specialty foods stores.
