About The Paris House

EDITOR’S LETTER

MICHELE ROSENTHAL Follow me on @theparishouse

I begin writing the November editor’s letter at 35,000 feet in the sky, leaving behind the vibrant Autumn hues in New York City and the Northeast for a new adventure on the West Coast in Palm Springs, California (that will remain a story for another day). Our November issue will highlight a recent trip to Rhodes, Greece, and an Autumn fashion photoshoot in New York City starring one of our favorite dancers. There are recipes for delicious hors d’oeuvres and side dishes to bring to your stylishly decorated Thanksgiving table. Our favorite fashionable outfits elevate the dinner, an “Out And About With Paris House” to inspire local day trips and more!

Let’s begin with how it all came to be and why I traveled solo to Rhodes, Greece. In October 2023, while visiting our son Oliver for parents’ weekend at Vassar College, we walked into The Three Arts, a tiny bookstore in Poughkeepsie, NY. Among the books piled to the ceiling and tiny aisles- there it was- right in front of my eyes One Hundred Saturdays: Stella Levi and The Search for a Lost World by Michael Frank. The cover illustrations, feeling somewhat Marc Chagall in style, caught my eye.

I was unfamiliar with the story of Rhodes and the Sephardic Jews and certainly had never heard of Stella Levi, who I believe is still alive and living in NYC at 100+ years of age. This is not a story of politics, nor is it about religion; it is about the human spirit and how life can change in a moment and how those left behind can find the strength to not only move forward but do so with impact, joy, resilience, grace and go on to share their story with the hope it will help somehow. I have been a voracious reader my entire life and can attest that a book can change your life or, at the very least, send you on a profoundly beautiful adventure.

Rhodes was one of the most gratifying solo trips I have ever taken. There was so much beauty everywhere:

• Architecture was like nothing I had ever seen.

• Birthday celebrations with new Greek and German friends.

• The gorgeous beaches.

• Hikes up to ancient ruins.

• Delicious food.

I miss Greece already and long to return to Rhodes. We hope you enjoy this beautiful issue and wish you all the best during the holiday season.

Michele Rosenthal

Rhodes, Greece

The captivating legacy of Rhodes, Greece, situated in the Aegean Sea, spans many centuries to unparalleled history and mythology BC.

The sun casts a beautiful glow on this spectacular island, where one wanders down cobblestone streets filled with cafes, shops, history, and restaurants.

The storied past meets the vibrant present, and at times, lines blur, and you feel both immersed in ancient ruins dating back centuries, and simultaneously in the present.

The architecture will leave you speechless; the food will dazzle your taste buds; the bays and the Aegean Sea will soothe your soul and relax your body and mind.

Boutique Hotel

S. Nikolis

From our first email, I knew my stay here would be delightful. I chose a beautiful room with a loft and easily accessible rooftop terrace. I enjoyed a nice breakfast daily outside in the garden. It’s conveniently situated, with great walkability everywhere through the old town. And to top it off, the concierge perfectly arranged my airport transfers.

Kókkini Porta Rossa

Kókkini Porta Rossa transports you into another world upon entering their red door. I was greeted by Nikos, Angela, Paris, and Giulia and was guided to their beautiful garden courtyard to enjoy a delicious and refreshing hibiscus tea. It was immediately apparent that this stay would be dreamy. They treated me like family and as if I were their dear friend, and that’s how I felt.

How incredible every moment was staying here! The attention to detail is unparalleled; not one thing is overlooked, and it is flawless. The location is ideal, in the charming Medieval Old Town, convenient to all the highlights for sightseeing.

Angela’s cuisine is beautifully presented daily for a breakfast of four courses served on linens, porcelain, and silver. The traditional yet innovative mouth-watering dishes are enjoyed in the garden with the loveliestsoft music and the sound of trickling water from the marble fountain. Nikos arranged a day of impeccably curated, off-the-beaten-path adventures based on my interests and love of food, the sea, and history. The pièce de résistance was securing a coveted dinner reservation at a nearby restaurant.

As this solo trip was for both business and pleasure, I could also take stunning photos in Denzi, the room I stayed in, and outside on the magnificent stone steps. I cried when I left, and I dream of returning to Rhodes, Greece, and Kókkini Porta Rossa! Thank you from the bottom of my heart for the most beautiful memories.

Other Noteworthy Hotels and Locations

Marco Polo Mansion is a stylish boutique hotel located in an ancient house. The restaurant is fabulous! For those looking to stay at a beachside getaway, there are plenty of wonderful hotels available in the area. Your travel planner can help select the one best for you.

Lindos

Lindos is situated approximately 50km from Rhodes. Its breathtaking views of white homes contrasting perfectly against the vibrant blue Aegean Sea provide awe-inspiring beauty in the Dodecanese.

Walk along narrow cobblestone alleys filled with charming shops, museums, and restaurants, where beauty awaits around every corner. Lindos beckons travelers around the world with its beautiful beaches, delicious restaurants, The Acropolis, and history.

This charming wharf has been perfectly located in town on the Waterfront by Newport’s Historic Hill since the 17th century.

The Acropolis of Lindos

Whether you climb to the summit or take in the views from the Bay, The Acropolis of Lindos is a must-visit. Dating back to the 4th century BC, the Temple of goddess Athena Lindia is a masterpiece of architecture. An impressive style of Greek, Roman, Byzantine, and Ottoman fortifications and an impressive Doric temple will leave you in awe of what was created so many centuries ago.

The Castle of the Knights of St. John, built in the 14th century, is one of the oldest castles in the world and adds another point of architectural importance to Lindos.

From the top of the Acropolis, you can see sweeping panoramic views of the heart-shaped St. Paul’s Bay and the beautiful beach. With a delicious restaurant and the Byzantine church, a favorite for wedding ceremonies. I climbed the approximately 300 steps to the top effortlessly this September on my birthday as a solo traveler. It was a wonderful experience and one I highly recommend, whether alone, with a tour guide, or with a group of friends.

We ended the day with a mezze and cocktails at Hermes, which has beautiful views of the Aegean Sea.

St. Paul’s Bay

Situated below the impressive Acropolis of Lindos is St. Paul’s Bay, a paradise that awaits you to swim, dine, relax, and enjoy spectacular views.

Synagogue Jewish Museum

The Jewish Museum of Rhodes

The Square of the Jewish Martyrs

The Jewish Quarter

The Jewish Museum of Rhodes and The Kahal Shalom Synagogue of Rhodes are on a cobblestone street in the Jewish Quarter. Follow the two famous fountains, and you will find the museum. The history is as beautiful as it is heartbreaking. I highly recommend you visit while you are there and learn more about its importance in the history of Rhodes.

La Juderia, the Jewish Quarter of Rhodes, Greece

Dating back to approximately 200 BC

In 1943, Rhodes was controlled and taken over by the Germans. 1,673 members of the Sephardic Jewish community were arrested and sent to Auschwitz, where the majority were murdered, with only 151 survivors.

The Square of the Jewish Martyrs in Rhodes

The square once located within the Jewish quarter, was filled with homes, shops, and a community. Many languages were spoken, one of which was Ladino. Sadly, the Germans bombed this Quarter during World War II. Here, you can now see the fountain with three seahorses in its place.

The Kahal Shalom Synagogue, built in 1577, is the oldest synagogue in Greece. It is in the Sephardic style, with the altar in the center. The Women’s prayer rooms were relocated to the upper balcony in 1935.

The Jewish Cemetery

In the 1930s, the Italian government relocated the Jewish cemeteries from the Juderia to the new city. The Jewish Cemetery remains one of the most preserved in Europe, with tombstones dating from the 1500s to the present.

The Medieval Town of Rhodes

Upon entering the meticulously preserved walls, you will be inside the Medieval Old Town of Rhodes. It is instantly easy to understand why the fortified town of Old Town is an Unesco World Cultural Heritage site. For over 2,000 years, this has been home to 6,000 residents. Here, you will find medieval buildings, Gothic and Byzantine churches, The Synagogue, famous fountains, mosques, and more. This is one of the most interesting and charming places to visit, and it is filled with history.

Points of Interest

In Old Town, a highlight is the Palace of the Grand Master, a re-stored fortress that was once the headquarters of the Knights of St. John.

Intricate mosaic floors dazzle visitors over many centuries

The Street of The Knights

The Street of The Knights is a historic preserved cobblestone street spanning 600 meters, connecting the port with the Acropolis of Rhodes. It begins at the square by the hospital, now an important archaeological museum. Along the street are seven inns built in the early 16th century, representing the countries where the Order of Knights began. The Auberge de France was most remarkably constructed in the mid 1400s to early 1500s. Opposite the Inn of France is the beautiful garden and Turkish fountain. Medieval architecture is an example of Rhodes’s history and will give you an insight into this important town.

Visit the Kahal Shalom Synagogue, the mosques of Suleyman, and Recap Pasha to better understand the diverse culture that makes Rhodes a historical and significant masterpiece.

The New Town is located outside the walls of the old and medieval towns. Explore vibrant nightlife, modern architecture, culture, concerts, fine dining, and more.

Kallithea

On our way to Anthony Quinn Bay, my driver and I drove first to Kallithea Springs, where its healing powers have been traced back to at least the 7th century BC. Over many centuries, the area became quite popular, enticing tourists and Hollywood! The notable film, The Guns of Navarone, was filmed there in 1961.

Kallithea remains a desirable retreat attracting travelers from all over the world to visit. While there, visit the grand dome with an intricate mosaic floor and sweeping sea views. Enjoy relaxing on the beach and a delicious lunch.

Anthony Quinn Bay and surrounding area day trip

Anthony Quinn Bay is nearby, and here, you will find paradise amongst rocky cliffs and turquoise water. If you are looking for a less crowded beach, Ladiko Beach offers a beautiful cove along the same shore without the crowds. Sunbeds and umbrellas are typically available at these locations.

Next, we continued our adventure along picturesque winding roads where goats adorned with bells walked through green pastures, with Mt. Profitis Ilias in the backdrop and where fresh drinking water was plentiful. It was here we came upon Church St. Nikolaos Foundoukli, built in the 15th century, one of the most important medieval buildings on the island.

A small stone building with stunningly beautiful murals adorning the walls of the church, the inscriptions indicating it was built in 1497-1498. This church will forever remain one of my favorite churches I have ever visited. Take note outside the church, where you will see some of the oldest olive trees in Rhodes, Greece, with trunks of almost 10-feet in diameter! It has been said that they may be as old as the church or even older.

We drove through Malona village, which has some of the oldest lemon and orange trees in Rhodes and Masari village with its scenic roads, bakeries and quaintness. A Dowry gives you olive trees passed down through generations.

Dining

On my first night in Greece, after a full day of travel, I was ravenous and craving Tzatziki, mezze and fried calamari. I popped into a small Greek restaurant a few minutes’ walk from my hotel. It was very enjoyable, and my waiter was delightful. He loved sharing the history of Rhodes with me. At the end of my meal, he brought me olive oil vanilla ice cream. It was a delicious first day in Rhodes, Greece.

The Bakery- located on Sokrates Street. We had coffee, and Galaktoboureko was filled with a vanilla custard enveloped in phyllo dough and brushed with sugar syrup.

It was Greek yogurt with honey and walnuts served with honeydew melon, Greek coffee, fresh-squeezed orange juice, and an omelet with green peppers and feta cheese.

Tambakio restaurant at Apostle Paul’s harbor has lovely views and beachside cabanas. We dined under a large ficus tree before my climb to the top of Lindos Acropolis. We enjoyed mezze, mojitos, and kataifi, sweetened with honey and filled with gruyere cheese and pistachios served over fig jam.

Kókkini Porta Rossa

Kókkini Porta Rossa breakfast is delicious, evocative, and glorious! A four-course breakfast is served in the beautifully designed and peaceful garden. I started with whipped feta over a sesame seed baguette topped with fresh figs with honey. Poached peaches in Prosecco with chopped pistachios, specially prepared eggs, innovative and artistically prepared cuisine with rose water, and more mouth-watering dishes are a few of the delicious foods I enjoyed each morning. And for happy hour, I was also dazzled with snacks, cocktails, and piano music.

Are you looking for some nightlife and a vibrant bar scene? Head to the New Town, take in a concert, and then enjoy dining.

The Sea Star Pizanias in Old Town

I still dream about the baklava and eggplant dish and their shrimp pasta in red sauce. It has a fantastic location, service, and a delightful, relaxing atmosphere.

Mageirotechneio Taverna Paraga

Mageirotechneio Taverna Paraga is located off the beaten path in Apollona. As a serious food lover who eats worldwide, I loved this charming restaurant. Their family-owned restaurant provides a small but fabulous menu with fresh cuisine from family members and their recipes. The Greek salad and the fried pita bread remains the best I have ever eaten. It’s a must-stop for the foodie!

About Julia

Julia is an actress, singer, dancer, and model who attends The Mary Louis Academy in Jamaica Estates, New York. Her dream is to be in a Broadway musical one day. She is off to a good start. Julia has performed in Off-Broadway performances at AMT Theater on W 45 St. and at Theater Row on W 42 St. with KOTA Productions. She has also danced with the Joffrey Summer Intensive Program at Symphony Space and the Moscow Ballet at Kings Theater and will debut as Clara on en pointe at Queens Theater in the Park. She has also walked in New York Fashion Week for multiple designers and in Chicago Fashion Week for Dior. Julia is working on making her performing aspirations a reality. It is safe to say that one of the 14-year-old’s favorite things to do is to see Broadway productions. Cabaret, Beetlejuice, and Anastasia are her all-time favorite musicals.

Speaking of NYC, her favorite place to get a hot dog is by the Mark Hotel, walking around Central Park. It is an inspiration as Julia loves to write novels, short stories, and poems out in nature. She loves going to eat Italian food at Bocca Di Bacco.

Last but not least, the musician-turned-model loves shopping at Tanya Taylor on Madison Avenue (among many other places).

There are many places around the world where you can travel, but NYC is truly the place to be. It has something for everyone here.

Enjoy autumn in New York!

Mac and Cheese

We based this recipe on one in Bon Appetit magazine. As I read their recipe, it just didn’t land right with me. Having said that, I didn’t make theirs, so I have no idea how it would taste. First of all, I like and prefer making mac and cheese with bechamel, and the more I read their recipe and thought it over, the more I decided to make changes. It is so easy and delicious that you can enjoy it from the stove. However, baking it in the oven topped with cheese makes it even more special and tasty.

Preheat oven to 375 degrees

Ingredients:

1lb of medium-shell pasta

Kosher salt for the pot of water

3 Tbsp of butter

12 oz of American cheese grated

3 cups of yellow (orange) sharp cheddar cheese grated

2 ½ cups about 8 oz of fontina cheese grated

2 tsp smoked paprika

¼ teaspoon of cayenne pepper

164

Directions:

Bring water to a boil and add the salt.

Add pasta and cook until al dente, taking care not to overcook!

Drain the water and reserve 1 cup of hot pasta water

Bechamel Sauce:

In a pot, melt five tablespoons of butter over medium heat

Stir in ½ cup of flour and whisk for a minute or two until flour and butter come together. Be careful not to burn or brown!

Add 4 cups of warm water and continue to whisk until sauce thickens up

To this, add a pinch of nutmeg, sea or kosher salt, smoked paprika, cayenne pepper, turmeric, fresh ground pepper

Stir in all cheeses (holding back about a cup of the cheddar to sprinkle on top)

The cheese will be a bit on the thick side. Add ½ cup of the hot pasta water to thin the cheese sauce. This method works beautifully and makes the sauce smooth and creamy.

Add the pasta to the pot and stir to combine; it’s delicious straight from the pot!

Add the three tablespoons of butter to the bottom of a gratin pan

Add the mac and cheese and top with the remaining cheddar and any other cheese you may have left over because there can never be enough!

Cover with aluminum foil and bake in a preheated oven for about 15 minutes. Then remove the foil and bake another 5 minutes or so until the cheese is melted, bubbly, and golden. Please note that the time in the oven will change if this is coming from the fridge and is cold. Then you will need longer in the oven! The foil helps keep it from drying out in the oven, and it’s amazing.

Paris House Book Review

One Hundred Saturdays

By Michael Frank

In October 2023, while visiting our son Oliver for parents’ weekend at Vassar College, we walked into The Three Arts, a tiny bookstore in Poughkeepsie, New York. Among the books piled to the ceiling and tiny aisles, there it was, right in front of my eyes: One Hundred Saturdays: Stella Levi and The Search for a Lost World by Michael Frank. The cover illustrations, feeling somewhat Marc Chagall in style, caught my eye. I was unfamiliar with the story of Rhodes and the Sephardic Jews and certainly had never heard of Stella Levi, who I believe is still alive and living in NYC at 100+ years of age. This is not a story of politics, nor is it about religion. It is about the human spirit and how life can change in a moment; how those left behind can find the strength to not only move forward but do so with impact, joy, resilience, grace and go on to share their story with the hope it will help somehow. I have been a voracious reader my entire life and can attest that a book can change your life or, at the very least, send you on a profoundly beautiful adventure.

The Martha Rules

By Martha Stewart

If you are interested in starting your own company or developing the one you already have, The Martha Rules is a fantastic book. I have returned to it many times when I am looking for tips, from one of the best.

Building Material

By Stephen Bruno

I went into this book thinking it would be a salacious, scandalous memoir of Stephen’s days as a Park Avenue doorman. I wanted all the juicy insider details of the residents of this prestigious address. However, there was very little of that, and I felt the book moved slowly. I did think it was fun to hear about all the drama amongst the doormen. Who would have thought it was so cutthroat!? It left me intrigued!

Martha: The Cookbook

By Martha Stewart

I had the pleasure of meeting Martha Stewart at the William Sonoma store in NYC for the book signing of her 100th book. Both she and the book are gorgeous! This will make a great addition to your home library and the perfect gift for the cook in your life.

Binge Watch

Martha on Netflix

No matter one’s feelings about the iconic Martha Stewart (I love her), this documentary is riveting. It follows her from the start to the height of her career as the doyenne of elegant living and becoming the first self-made female billionaire in America to her catastrophic fall from grace. It’s sad how people take joy in knocking someone off the pedestal they crafted with their very own hands and how the boys on Wall Street set out to destroy her. However, in Martha’s style, she came back with a vengeance and, at the age of 83, continues to influence us in all the right ways, and “That’s a Good Thing!”

Ask Michele

Question: For people who live in an apartment or condo and need more storage space and, therefore, cannot store many seasonal things like special plates, decorations, etc. What would be a creative or easy way to add an extra special touch to make the holidays special?

Answer: Don’t let limited space stop you from hosting stylish soirées! I have been there. In my early to mid-20s, I lived in a small apartment on an even smaller budget. I had a small collection of items to entertain, all gifted to me from my grandmother Margaret, along with pieces I collected at tag sales and gift shops. Invest in 12 white dinner plates, 12 dessert plates with a gold rim, which will be used for multiple dinners, and 12 simple yet stylish modern champagne flutes, wine glasses, and water goblets.

Stock up on a few tablecloths, such as one in pink that can be used in the spring and Valentine’s Day—investing in a crisp white tablecloth, something autumnal, and one in seasonal Christmas hues. They will only take up a little space, can be folded over a hanger, and stored in a closet; you will use them for years. Add brass candlesticks, chic flatware, and cutlery, essential items that can go in a linen closet and be mixed and matched throughout the year. Flowers and candles can add special touches and take up no additional storage space. Add a colorful autumn leaf to the top of your white dinner plates at Thanksgiving, a beautifully dyed Easter egg to make it festive, and pinecones down the table with fresh greens at Christmas. These are affordable additions, and you won’t need space to store them as they

are perishable items. If you have room, a well-stocked bar cart or liquor cabinet and a Bluetooth speaker can guarantee everyone will have the time of their lives!

Question: Do you have any particular games or traditions you do with your family each year?

Answer: We read The Night Before Christmas, which my grandparents gifted me as a little girl. We also always make candy cane cocktails and eat way too many yummy cookies while leaving a plate out for Santa.

Question: How do you keep Christmas magic alive when no little kids are in the house?

Answer: There is something magical about Christmas that keeps us children at heart no matter how old we are. Playing Christmas music, freshly baked homemade cookies, and a freshly-cut Christmas tree with beautifully wrapped gifts underneath beckons one to gather together and feel childhood joy at every age.
